Kathy Dixon is a clinical professor and registered dietitian at Arizona State University. She has taught nutrition undergraduate and graduate courses at Arizona State University for 20 years, along with curriculum development. Her research interests include food service in healthcare and institutional settings, and pediatric diet therapy. She was awarded Outstanding Dietitian of the Year in 2014 by the Arizona Dietetic Association.
